  • 1/2 Cucumber, chopped or sliced

  • 1 T. Celery, chopped or sliced

  • 4 or 5 Radishes, chopped or sliced

  • 1/2 medium Purple or Vidalia Onion, chopped or sliced

  • 1 Lemon (juice and pulp)

  • 1/2 cup Non-Fat, No Sugar Added (NSA) Yogurt

  • Salt, Pepper, Herbs and Spices- do not use salt or any seasoning with salt or sodium for Low Sodium, Renal or Renal Diabetes

  • Optional: Creole Seasoning- do not use if Low Sodium, Renal or Renal Diabetes


  1. Chop or slice the Cucumber, Celery, Radishes and Onions.

  2. Place all the chopped ingredients into a bowl, add the yogurt and lemon and mix well.

  3. Season with desired spices.

  4. Refrigerate for storage.

  5. Serve Cold.

This recipe makes 4 Servings- 1/2 cup serving.
