Tomato and Broccoli Salad

  • 2 cups Cherry Tomatoes, whole or cut in fourths and cubes

  • 2 cups fresh Broccoli, chopped into small pieces

  • 1/4 cup Avocado Oil Mayonnaise or Olive Oil

  • 1 Lemon or Lime (Pulp and juice)

  • 1/2 t. Italian Seasoning

  • 1/4 cup Vidalia Onions, finely chopped

  • Salt and Pepper- do not use salt if Low Sodium, Renal or Renal Diabetes.


  1. Chop the tomatoes, broccoli and onion.

  2. Mix together the mayonnaise, lemon/ lime pulp and juice, Italian seasoning and salt and pepper.

  3. Toss this mixture lightly with the broccoli and tomatoes.

  4. Refrigerate for an hour.

1 Serving = 1/2 cup. This recipe makes 4 Servings.
