Mini Pizzas (freezer-ready)

Healthy FOOD SPIRAL®: 1G


  • 6 Whole Wheat English Muffins

  • 3/4 cup pizza sauce, no/low sodium

  • 3/2 cup Low Fat Mozzarella Cheese, shredded

  • Assorted lean meat, fruit and vegetable toppings

*Note: If you add pepperoni to this meal, it will become a 3Y.



  1. Line a baking sheet with aluminum foil.

  2. Open the English muffins and lay them on the pan with the cut side facing up.

  3. Spread 1 Tablespoon of pizza sauce on the surface of each muffin and top with 2 Tablespoons of cheese.

  4. Prepare your toppings. For example: pepperoni, pepper, onion, spinach, tomatoes, etc.

  5. Place your toppings on the top of your pizza.

  6. Press down lightly on each muffin to keep the ingredients tightly packed for freezing.

  7. Place plastic wrap over each baking sheet and freeze for about 8 hours, or until the pizzas are frozen.

  8. Transfer the frozen pizzas into a gallon-sized zip-lock bag.

  9. *Pizza’s should be consumed within 3 months from freezing and 2 days after thawing.


Baking instructions:

  1. Preheat the oven to 400 degrees F.

  2. Place the number of pizzas you wish to bake onto a baking sheet to partially thaw (about 7 minutes).

  3. Once the oven is preheated, bake for 15 minutes, or until the edges are golden brown.


1 serving = 1 mini pizza. This recipe makes 12 Servings.
