Corn and Lima Bean Relish

  • 27 ounces Corn (fresh, frozen or unsalted canned)

  • 16 ounces Lima Beans (fresh, frozen or unsalted canned)

  • 1 Vidalia onion, small

  • 1 Red Pepper, small (or Tomato, optional)

  • 4 oz. Fat Free Italian Dressing

  • Chopped Cilantro for garnish



  1. Dice the onion and red pepper.

  2. Thaw your corn and/or lima beans in the microwave if you have frozen ingredients.

  3. If you have canned corn and/or lima beans, drain and rinse with cold water. Skip this step if this does not apply to you.

  4. Put the corn, lima beans, onion and red pepper into a large bowl.

  5. Toss the ingredients with the FF Italian Dressing.

  6. Top your relish with a cilantro garnish.

  7. Serve cold or at room temperature.

  8. Enjoy!


1 serving = 6 ounces. This recipe makes 8 servings.
