Ingredients:

1 cup Egg Beaters

1 cup Mixed Vegetables

2 T. Fat Free Cheese

Salt & Pepper


Directions

Cook egg beaters flat on the skillet. Add cooked vegetables and cheese and salt and pepper to taste. Fold the omelet in half to cover the vegetables and cheese. Put onto a plate and top with cilantro or desired herbs. Enjoy!
