Shrimp Caesar Salad

1 cup Kale or Spinach

6 Shrimp

1 cup Mixed Vegetables

2 T. Lite Caesar Dressing

1/4 Avocado

Salt & Pepper

Pam® Spray


Cut the tails off of shrimp and salt and pepper both sides. Spray two pans with Pam® Spray and cook shrimp on low-medium heat in one pan. In the other pan, cook mixed vegetables on low-medium heat until softened. Slice 1/4 avocado on a cutting board. Place kale or spinach in a bowl. Add cooked vegetables, avocado and cooked shrimp. Top with 2 T. Lite Caesar dressing and enjoy!
