Allergy Free Chocolate Chip Cookies

Ingredients:

1/2 c soy-free dairy-free butter
1/2 c sugar
1/2 c brown sugar
3 T. canola or safflower oil
3 T. water
2 tsp. baking powder
1 tsp. vanilla extract
1 ½  c. oat flour
½ tsp. baking soda
½ tsp. salt
¼ tsp. xanthan gum
1 c. dairy free chocolate chips


Directions

Preheat oven to 375 degrees.  Line baking sheet with parchment paper. Cream butter & sugars.  Mix oil, water & 2 tsp. of baking powder together in a separate bowl. Add oil mixture & vanilla to creamed mixture, combine. Sift together flour and remaining dry ingredients. Add to dough. Add chocolate chips. Place teaspoon sized balls of dough 2 inches apart on cookie sheet. Bake for about 10 minutes or until golden brown.
